 How amazing does this soup look? It is actually so delicious; courtesy of my new favorite kitchen item!!! The Le Creuset Bean Pot fromkitchenwaredirect.com.au is truly special. I have slow cooked two soups, a curry, and a chilli since I received it last week. Everything has tasted delicious. You need a simmer mat/heat diffuser to cook on a gas stove top; as it is stone it cannot be exposed to naked flame. Click photo to view recipe. My Greek wasn't that great last time I checked (non-existent) so correct me if I'm wrong! This 3-bean dish is amazing- comforting, healthy and hearty! And so easy!  There is something so homely about stuffed zucchinis....these are made with brown rice, a small amount of oil and a tiny amount of salt; however they still manage to 'hit the spot'.
