I ADORE cauliflower; I find it so versatile and it lends itself to other flavours well. I wanted to create a wheat and gluten free pizza, (without using a terrible tasting gluten free base!) and this baby hits the spot. You may still need to use a fork to eat it, but it tastes better than any gluten free pizza I've ever had! Great to whip up when unexpected visitors arrive, when you have nothing else to cook, or you simply can't be bothered! The gorgeous Lisa from The Vegetarian Pact inspired this meal.... There is no recipe on my site, but please visit Lisa and Jim's blog for the delicious recipe! I made a few changes- I kept the pumpkin cubed, and made the pesto with fresh basil also.
