Nourishing Black Bean and Sweet Potato Stew

  1. In a large, heavy based pot, heat coconut oil and sauté onion and garlic until soft
  2. Add sweet potato, grated ginger, tomatoes, water and black beans
  3. Bring to a gentle boil, then drop to a simmer
  4. Simmer for 30 minutes over a medium heat, or until sweet potato is soft
  5. Add rice wine vinegar, mirin, sesame oil and miso paste; stir gently
  6. Stir through parsley and coriander, and serve over quinoa or brown rice
