I served this at an event I ran a few months ago. It was eaten by everyone there, the bowls licked clean and happy grins all 'round.
Ingredients
1/2 cup chia seeds
1 1/2 cups coconut cream
2 tbsp blueberries
1 tbsp coconut sugar
2 tsp acai powder
Instructions
Mix all ingredients together in a large bowl
Cover and refrigerate overnight or for 4 hours
Serve with acai and extra blueberries sprinkled on top

Ingredients
1/3 cup coconut milk
2 tbsp raw cacao powder
2 tsp raw coconut sugar
1 tsp vanilla bean paste
1/4 tsp ground cinnamon
2 cups filtered water
Grated orange zest optional
1 tbsp nut butter (almond/hazelnut) optional
Instructions
Whisk all ingredients in a small saucepan
Bring to a gentle simmer and whisk again
Pour into mugs and sprinkle with extra cinnamon

1 Tub Vanilla Soy or Co-Yo Coconut Yoghurt
1/2 Cup Fresh Raspberries
1/4 Scraped out Vanilla Bean Pod
1 Tbsp Sunflower Seeds
1 Tbsp Pumpkin Seeds
1 Tbsp Fresh Pomegranate Seeds
1 Tbsp Raw Cacao Nibs
Instructions
In a bowl, muddle the raspberries and vanilla together (best use a wooden muddler or wooden spoon)
Mix the raspberry and vanilla through the yoghurt
Top with sunflower and pumpkin seeds, pomegranate seeds and cacao nibs
You could also add chopped banana, fresh strawberries, mango and passionfruit! Delicious!
