Californian walnut pasta salad…

  1. Cook and drain pasta until al' dente, run under cold water
  2. Whisk the olive oil, lemons, pepper and parsley together
  3. Toss the pasta with the dressing, then gently mix the carrot, spinach, cherry tomatoes and walnuts
  4. Top with avocado and serve chilled
