Coconut and Kale Potatoes

  1. Steam the potatoes until tender, but not falling apart; about 15 minutes
  2. In the meantime, sauté the onions and garlic until soft
  3. Add the spices, and stir until fragrant
  4. Gently add the steamed potatoes, and stir to coat
  5. Pour in the coconut cream, and the torn kale
  6. Bring to a gentle simmer, and add salt to taste
  7. Serve as a side dish to a vegetable curry or with a big salad
