Dukkah Crusted Sunchoke Gratin

  1. Pre-heat oven to 200ºC
  2. Wash and rinse the sunchokes and potato well, and leave them to soak in a bowl of warm water for 10 minutes
  3. Drain them and rinse again, this will dislodge any extra dirt and grit
  4. In a bowl, whisk the coconut cream, turmeric, salt and pepper together
  5. Add the drained sunchokes and potatoes then toss them through the cream
  6. Spoon into individual ramekins or a large baking dish
  7. Top with dukkah and bake for 45-60 minutes with the lid on
  8. Remove lid and bake for a further 5 minutes
  9. Homemade Dukkah:
  10. Toast the ingredients in a non-stick fry pan for about 5 minutes
  11. Process in a blender until coarse
