Fully Loaded Nachos/Walnut Cheese….

  1. Nacho Walnut Cheese:
  2. Rinse and drain the walnuts well
  3. Place all ingredients in a blender and process until you reach desired consistency; I wanted mine a little bit chunky, but you could add more water/milk to thin it out
  4. To make the nachos:
  5. Layer plain corn tortilla chips in an oven proof dish
  6. Top with mashed kidney beans and walnut cheese
  7. Bake in a moderate (150ºC) oven for 10-15 minutes
  8. Top with fresh salsa; tomato, onion, spring onion, garlic and lemon juice, and
  9. Guacamole; fresh avocado, tomato, onion, coriander, freshly squeezed lime, salt and pepper
  10. Serve, topped with jalapeños and coriander
