Gooey Chocolate Chunk Nut Cookies

  1. Pre-heat oven to 180ºC
  2. Melt the coconut oil/margarine and whisk in the coconut sugar and vanilla bean paste
  3. Stir in the LSA or flax meal well
  4. Sift in the plain flour, rice flour and baking powder and gently mix
  5. Add the vegan chocolate, macadamia nuts and walnuts and use your hands to mix
  6. The dough should be chunky, not to dry and not too wet- add 1 tsp at a time of water if too dry; or 1 tsp flour if too wet
  7. It should sit firmly in a ball on a baking tray, and flatten it down gently with your fingers
  8. Bake for 10-12 minutes until slightly golden and allow to cool before serving
