  1. In your blender, process the coconut flakes, dates (or alternative), coconut oil and sea salt
  2. Blend until it becomes like a sticky dough, and then press into the base of a springform cake pan
  3. Clean your blender, and process the bananas, mango, pineapple and coconut oil until smooth
  4. Add the chia seeds and psyllium husk, and blitz again quickly
  5. Pour the fruit mix onto the base, and allow to set for 3-4 hours, or overnight
  6. Top with balled dragonfruit, kiwi fruit, cubed mango and finger limes
