Open faced Pumpkin and Chickpea Burger

  1. Process the pumpkin and chickpeas until a smooth paste forms
  2. Mix in the breadcrumbs, egg replacer, spices, pepper and lemon juice
  3. Cover and place in the fridge for 30 mins
  4. When chilled, use your hands and form into patties
  5. Cook for 4-5 minutes on each side, in a non-stick pan
  6. Serve on fresh sourdough, with tomato, baby spinach, tomato relish and red onion
