Ratatouille de la tête vegie

Vegie Head Ratatouille!



  1. Saute onion for 4 minutes over a medium heat
  2. Add capsicum, potatoes, eggplant, broccoli and zucchini and cook for a further 5 minutes, stirring regularly
  3. Add tomatoes, paste, basil, garlic and parsley and cook over a medium heat for 20 to 25 minutes until eggplant is soft
  4. Serve with rice, pasta, or crusty bread
