Stuffed Antipasto Mushrooms

  1. Preheat oven to 180ºC
  2. Gently wipe the mushrooms clean and remove stems
  3. In a blender, process the olives, artichokes, tomatoes, garlic and sour cream together
  4. Using a teaspoon, fill the mushrooms gently
  5. Top with passata sauce and bake for 30 minutes
  6. Top with fresh parsley and fresh pepper
