South African sweet potato, kidney bean and peanut stew

  • YIELD: Serves 4



  1. Brown the garlic and capsicum and saute until tender
  2. Add spices, stir until fragrant
  3. Add sweet potato and stir to coat
  4. Add tomatoes, tomato paste, peanut butter, and 2 or 3 cups of water to cover
  5. Bring to a boil, then simmer until potatoes are tender- about 20 minutes
  6. Add kidney beans and cook for another 10 minutes, adding more water if needed
  7. Add salt and pepper to taste
  8. Garnish with fresh coriander
