Nourishing Brown Rice Breakfast Bowl…

  YIELD: 2 Servings PREP: 5 mins COOK: 10 mins READY IN: 15 mins Ingredients 1 cup Brown Rice cooked to packed instructions 2 cups homemade almond milk or alternative 1/2 tsp ground nutmeg 1 persimmon Quartered 1/2 cup Fresh Strawberries hulled 2 tbsp hemp seeds 2 tbsp Black Sesame Seeds 2 tbsp raw almonds Instructions In a small saucepan, heat the almond milk, rice, cinnamon quills and ground nutmeg Simmer for 5-6 minutes or until gently heated Ladle into bowls and top with fruit, hemp and sesame seeds Serve immediately CUISINE: Asian COURSE: Breakfast SKILL LEVEL: Beginner

Crunchy Yoghurt Snaps

YIELD: 14-18 pieces PREP: 5 mins COOK: 30 mins READY IN: 35 mins A quick, delicious and healthy snack! Ingredients 400 g coconut yoghurt or dairy free alternative 3/4 cup granola or muesli 1 tbsp goji berries 1 tbsp coconut flakes 1 tbsp crushed nuts of choice 2 tsp Raw Cacao Nibs Instructions Line a freezer proof tray with baking/parchment paper Pour in the coconut yoghurt, and top with granola, goji berries, coconut flakes, crushed nuts and cacao nibs Freeze for 30 minutes to over an hour, and snap into bite sized pieces. Will last in the freezer for a month, in an airtight container Use any toppings you like; cacao, carob chips, fresh berries, banana, apple.....enjoy! COURSE: Snack SKILL LEVEL: Beginner

Double Chocolate Chi Coconut Smoothie…

YIELD: 1 1/2 cups (1 Servings) COOK: 2 mins My friends from Chi Coconut Water asked me to create a delicious smoothie.......this was the result! Ingredients 1 cup Chi coconut water 1/2 cup homemade almond milk 1 banana frozen and broken into quarters 1 tbsp raw cacao powder 1 tbsp cacao nibs 1 tsp maca powder optional 1/2 tsp pure vanilla paste/essence 1/2 tsp ground cinnamon Instructions Blend all ingredients together until smooth Top with desiccated coconut and extra cacao nibs COURSE: Breakfast SKILL LEVEL: Beginner

Ingredients 1 coconut, flesh and water 1 cup green tea brewed and chilled 1 cup pineapple chopped roughly 1 tbsp goji berries 1/2 tsp turmeric fresh or ground 1/2 cup mango chopped 1 tsp chia seeds 1 tsp shredded coconut to serve Instructions Blend for 1 minute, top with extra goji berries and shredded coconut - slurp!
